Apple Cinnamon Baked Oatmeal

This recipe is a winner for sure! Combining all your favorite flavors of cinnamon and apples with lots of oats too, into one easy delicious breakfast bake. Its healthy, high in fiber & will fill you up and keep you energized till lunch. Plus it tastes like your favorite dessert! Especially when topped with an icing glaze or whipped cream... or both!


INGREDIENTS

Oatmeal Bake:

3 cups Instant Oats

1/2 cup Flour

1/2 - 3/4 cup Brown Sugar (depending on how sweet you want it)

1 1/2 Tbsp Cinnamon

1 tbsp Baking Powder

1 large Apple, peeled & grated (or 2 small ones)

2 Eggs

1 cup Milk (of any kind)

1/4 cup Butter or Margarine, melted

2-3 tbsp Honey

1 tsp Vanilla


Icing:

1/2- 3/4 cup Icing sugar

1/2 tsp Vanilla

1 tbsp Milk

INSTRUCTIONS

Preheat oven to 350 F and prepare a 8x8 baking pan by spraying with vegetable oil spray or parchment paper.

Then in a medium bowl combine the dry ingredients, oats, flour, brown sugar, cinnamon, baking powder. Mix lightly to combine.

In an other bowl, combine the shredded apple, eggs, milk, butter, honey and vanilla, whisking to combine.

Now pour the wet mixture into the oat mixture and using a rubber spatula mix until combined. Pour into prepared baking pan and dust with a touch more cinnamon and even a bit more brown sugar if you like. Bake for 25-30 minutes until inserted toothpick comes out clean. Serve immediately with icing or whipped cream!


Icing:

Combine ingredients in a bowl and whisk until smooth, if to thin add more icing sugar. Drizzle on top and enjoy!
