Bacon Egg & Cheese Breakfast Sandwiches






INGREDIENTS


6 large Eggs

3 Slices of Cheddar cheese cut in half

6 or so pre-cooked Bacon slices

6 English Muffins

1 recipe of Garlic Herb Mayo

Salt & Pepper


INSTRUCTIONS


Begin by preheating oven to 375, cook bacon now if you don't already have some on hand. Grab a medium sized muffin tin, grease 6 cups with vegetable spray. Crack 1 egg into each pre-sprayed cup and season with salt & pepper. Bake eggs until no longer jiggly. Spread English muffins on a pan and bake until just crisp. Remove from oven and spread a dollop of Garlic Herb mayo on one side, or both!


Once eggs are baked, take a butter knife and go around edges, then take a large spoon and carefully remove eggs from muffin tins and place on 1 half of muffin. Next add a slice of cheddar cheese and a slice or 2 of bacon. Complete with other side of English Muffin and enjoy! I also like to bake up a few Hash brown patties to go on the side, which can be picked up in the freezer section of your local supermarket!



Wrap the extras up freeze them! When you need a quick breakfast just take one out and reheat it in the microwave or oven for a few minutes and enjoy a quick on-the-go breakfast!
