Baked Cherry Tomato & Feta Rotini




One of the best, most simple pasta dishes I’ve ever had! & It can be made in under 30 minutes! Another great weeknight dinner & especially good if you add in the shrimp!


INGREDIENTS

2 pints of Cherry Tomatoes, rinsed

2-3 tbsp Olive oil

Salt & Pepper

1 medium sized chunk of Feta Cheese

2-3 cups Rotini noodles

1 large handful of fresh Basil, roughly chopped

2 cloves Garlic, pressed

OPTIONAL: 1 bag of Large shrimp or Tiger shrimp, skin & tails removed

INSTRUCTIONS

Preheat oven to 425F & on a sided baking sheet or large casserole dish, spread out cherry tomatoes and drizzle with olive and sprinkle evenly with salt & pepper. Place chunk of feta cheese in the middle of tomatoes and give it a sprinkle of olive oil. If you are adding in the shrimp place them in with the tomatoes and feta, spreading them out evenly in the pan. Then place in oven & bake for about 20 minutes.

While that is baking cook the rotini noodles according to the package directions, cooking until just before the al dente stage. Strain and drain the noodles and set aside for now. Once tomatoes are nicely browned and loosing their juices remove pan from oven & mix the baked feta together with the cooked tomatoes. Then add in the cooked noodles, the chopped basil and the 2 cloves of freshly pressed garlic and a bit more olive oil if you so desire and stir until everything is nicely combined. Serve with fresh French Bread or Garlic Toast.
