Banana Bread


A light & fluffy banana bread, that works every time! And the prefect way to use up all those frozen bananas taking up room in your freezer! This recipe can be easily doubled if you so desire!


INGREDIENTS

Single Batch

1/2 cup Margarine or Butter

1/2 cup White Sugar

1/2 cup Brown Sugar

2 large Eggs

3 very ripe Banannas (they can be frozen but be sure to defrost a bit first)


1 3/4 cup Flour

1 tsp Baking Soda

1/2 tsp Baking Powder

1/2 tsp Salt

3/4 cup Chocolate Chips (optional but delicous)


INSTRUCTIONS

Begin by preheating oven to 350 F. Cream together butter & sugars in your upright mixer uing the paddle attacment. Add in the eggs one at a time beating in between, until smooth. Next add in the bananas & blend again until smooth.

In another medium bowl, measure out dry ingredients & stir. Pour the bananna mixture in with the flour, stirring only to combine. The mixture will be quite thick, but do not worry! You can now add in the chocolate chips if you like!

Transfer batter to a greased Loaf Pan. Bake for 50 minutes to an hour until an inserted tooth pick comes out clean. Remove from oven and place pan on a cooling rack, let cool in pan for about 10 minutes or so before removing from pan. Wrap in a cloth and place in a ziplock bag and store out on the counter for about a week. Or freeze and store for a few months.
