Black Bean & Beef Burritos


These truly are the best burritos ever! Ready in about 30 minutes, its the perfect weeknight dinner! Soft flour tortillas filled with a yummy Black Bean and Beef mixture. Along with fluffy rice, chunks of avacado and cheese. This dinner is sure to please the whole family!



INGREDIENTS

2-3 tbsp Olive oil

1 small yellow Onion, diced

1/2 lb Ground Beef

3-4 cloves, Garlic, pressed

2 tbsp Chili Powder

1 tbsp Cumin

1 tbsp Paprika

1-2 tsp Mccormicks Roasted Garlic & Red Pepper

1 tsp Salt & Pepper

1 15 oz can Black Beans, rinsed and drained

1 handful Cherry Tomatoes, chopped

1 Red or Orange Pepper, diced

1 heaping cup Salsa (i like Presidents Choice Corn & Black Bean Salsa)


For Serving: Sour Cream, Sliced Avacado, 1 cup or so of Cooked Rice, grated cheese and large Soft Tortilla Wraps.


INSTRUCTIONS


Black Bean & Beef Mixture:

In a medium high sided pan, heat the olive oil. Add in the diced onion and ground beef. Break the beef up into smaller chunk using a wooden spoon. Continue cooking until beef is browned, then add in pressed garlic and spices.

While beef mixture is cooking set about 1 cup of rice to cook.

Now that beef is cooked add in the black beans, cherry tomatoes, diced pepper and salsa. Continue cooking for 10 more minutes or so. If your feel like your sauce is to dry, try adding a 1/2 cup of water. Taste mixture and adjust the seasoning if needed.


To Build Burrito: Start with a wrap, do a layer of Black Bean & Beef mixture and then spoonful of rice, a few chunks of avacado, a sprinkle of grated cheese and a bit of sour cream! And enjoy! This recipe feeds about 4 grown ups!
