Black Bean & Corn Chili

A heart warming chili full of black beans, crisp corn & hearty vegetables





INGREDIENTS

2 tbsp Olive Oil

Medium Onion, diced

4-5 Carrots, diced

3 Celery stocks, diced

3 cloves Garlic, pressed

1/2 pound of Lean Ground Beef

2 tbsp Chili Powder

2 tsp Cumin

3 tsp Oregano

1 tsp McCormicks Roasted Garlic & Red Pepper

1 tsp Hot Chili Flakes

1 tbsp Sugar

Salt & Pepper to taste

1 28 oz can Diced Tomatoes

2 16 oz cans Tomato Sauce

1 can Black Beans, drained & rinsed

1 cup Frozen Corn

1 can Tomato Paste

1 medium Red Pepper, chopped


INSTRUCTIONS


In dutch oven on medium heat warm olive oil.

Add ground beef, break up into small chunks with wooden spoon.

Next, add in onion, carrots, celery and garlic.

Cook until ingredients are tender and beef is cooked completely through (no pink should show).

Season with listed spices, feel free to increase spices to your own personal taste! Add can of whole tomatoes, break up tomatoes into chunks with a wooden spoon. Then add in desired stock.

Bring mixture to simmering point. Add in sugar, taste for flavor, adjust spices as needed.

Next adding black beans, corn and tomato paste. Allow mixture to simmer, stirring every so often. Finally add in red



Serve chili with grated cheddar cheese, sour cream, chopped green onion or sliced avocado or guacamole.
