Black Bean & Egg Burritos

These are the best Black Bean & Egg Burritos you will ever eat! They are simple to make and this recipe makes 4 burritos which can be frozen and reheated in a flash! And yup they are VEGITERIAN, that's right! Even meat eaters will love these!

INGREDIENTS


Bean mixture:

1 can Black Beans, strained & rinsed

2-3 tbsp Olive oil

1/2 Onion, diced small

2-3 cloves Garlic, pressed

2-3 tbsp Lime Juice

1/2 tsp Cumin

1/2 tsp Chili Powder

1/2 tsp Oregano

1/2 tsp Salt & Pepper, of each


Pico: (you can also use canned Salsa if you prefer)

1-2 Roma Tomatoes, diced & strained

1 small, Jalapeno, minced

1/4 of a Red Onion, minced

1/4 cup Cilantro, chopped (you can also use parsley if you prefer it)

2 cloves Garlic, pressed

1-2 tbsp Lime Juice (lemon works too)

1/2 tsp Salt & Pepper each


What else you will need for the Burritos:

4 Eggs

1 cup Smoked Cheddar Cheese, grated

(white cheddar or even just regular cheddar works too)

4 large Tortillas (white, whole wheat of even the tomato ones are good too!)


INSTRUCTIONS

Bean Mixture:

Start by heating up a small to medium sized sauce pan, you want it to be big enough to fit a whole can of black beans! Add in the olive oil and diced onion. Cook for a few minutes until translucent. Add in pressed garlic and cook for one more minute. Now add in the strained and rinsed black beans, as well as spices including cumin, chili powder, oregano, salt & pepper, as well as the lime juice. Cook for 10 minutes or so on a medium to low heat, mixing every so often until heated throughout. If you prefer your beans mashed up a bit you can remove pot from heat and using an emersion blender, blend until somewhat smooth, or whatever you preference is! Set aside this mixture for now!


Pico de Galo:

In a small bowl combine diced & strained tomatoes with the garlic, jalapeno, cilantro, lime juice and salt & pepper, Mix till combine, then set aside.


Eggs:

Heat a small frying pan on medium heat. Grease with oil or butter (whichever you prefer). Then in a small bowl crack ONE egg, scramble it up with a fork. Pour into heated frying pan. Cook until no longer runny and brown on one side, flip with a spatula and cook remaining side, (basically like your making a mini omelet). Once egg is cooked, remove from frying pan, set aside on a small plate and season with salt & pepper. Repeat until all 4 eggs are cooked.


To make Burritos:

Begin by laying out 4 large flour tortillas, place 1 cooked egg in the middle of each tortilla.

Then add 1/4 cup or so of the bean mixture, spread evenly over egg.

Follow that with a large spoonful of Pico de Galo.

Finally add a 1/4 cup of grated smoked Cheddar cheese.

Now your ready to fold it! Start by folding the outside edges towards the middle. Then fold up the bottom towards the middle. Now roll everything towards the top till its in a nice little Burrito shape! Repeat until all your Burritos are made! I then like to pan fry them in a tablespoon of oil and finish them off in a 350F oven till they're nice and warm inside. Although these can also be heated in a Toaster oven or just the microwave if your really busy! Enjoy with some extra Pico de Galo and Sour cream on the side! Or make it a real breakfast by adding some Roasted Potatoes on the side too!
