Brussel Sprouts & Bacon Pesto Pasta

A wonderfully flavorful fall pasta recipe, its simple but hearty and is the perfect weeknight dinner & its ready in under an hour!



INGREDIENTS

1 pkg. Thick cut Bacon, chopped

3-4 cups Brussel Sprouts, washed and sliced

2-3 cloves Garlic, pressed

1 bottle Basil Pesto

Salt & Pepper

3-4 cups Sea Shell Pasta

Parmesan Cheese


INSTRUCTIONS

Begin by setting a large pot of salted water to boil for your pasta, once boiling cook pasta according to the directions and set aside.

Then in a sauce pan on medium heat, cook chopped bacon until crisp. Remove bacon from pan and set aside. Discard most of the bacon fat, leaving a few tablespoons behind. In that same sauce pan add sliced Brussel sprouts & cook until tender, adding in the pressed garlic about halfway through (about 5-8 minutes).

Return cooked pasta to pot, adding in the cooked Brussel spouts, chopped bacon and most or all of the bottle of Basil Pesto (depending on how saucy you like it!) Heat on a medium to low heat until everything is nice and warm, season with salt & pepper. Serve with a sprinkling of parmesan and even a few slices of Garlic toast and enjoy!
