Like pizza pops but more grown up! With dough made from scratch and then filled with savory tomato sauce, Pepperoni and Red Pepper, Bacon bits.... Whatever you choose really they are always delicous! Baked to golden brown perfection & a little Cesar Salad on the side, it the perfect Friday night dinner.
INGREDIENTS
Dough:
1 tbsp Active-dry Yeast
1 tsp Sugar
1 cup Warm water (not to hot! Or you will kill the yeast!)
2 tsp Salt
2 tbsp Olive oil
2 1/2 - 3 cups Flour
Fillings:
1 Can of Pizza Sauce
1 1/2 cups Mozerella, grated (or a mixed with cheddar, whatever you have on hand!)
Pepperoni, Ham, Itaian Sausage, Bacon (Whatever you have on hand or feel like really! Ive even tried Italian Meatballs!)
Chopped Red or Geen Pepper, Red onion, Pineapple, Fresh Basil, Mushrooms... the possibilities are endless!
Topping:
1 egg, whisked
1-2 tbsp Water
1/3 tsp Italian Seasoning
INSTRUCTIONS
Dough:
In a large measuring cup, measure out yeast, sugar and water. Let sit until proofed in a warm spot, for about 10 minutes.
Once mixture is nice foamy and has doubled in size pour mixture into a bowl and add the salt, olive oil mix lightly until combined. Then add the flour, 1 cup at a time until dough starts to come together. If your dough is still in chunks, use your hands to form dough into a rough ball, knead for a few minutes then let rest back in the bowl. Coat bowl with a tbsp of olive oil and place a tea towel over top and let rest in a warm spot. Let rest for about an hour.
Assembly:
Preheat oven to 425 F and get a baking sheet coverd in parchment ready to go.
Divide dough into 4 equal parts and roll out an a flour covered surface until dough is smooth, round and flat!
Place a tbsp or so of Pizza sauce on half of the dough, leaving about a half inch of room around the outside.
Spread your choosen toppings over sauce, cover with cheese (and a little extra sauce, if your feeling saucey)!
Fold the other half of dough over sauce and topping and crimp closed by ither folding dough over itself or by using a fork, stab top with fork to create steam holes. Place Calzone, carefully onto prepared baking sheet. Repeat until all the Calzones are filled!
Combine egg, water and italian spices in a smal bowl, whisk to combine. Using a pastry brush spread egg mixture generously over calzones.
Place in oven and bake for 20-30 minutes until golden brown! Let cool for 5 minutes of so before eating, because they will be hot! Enjoy alone or with a little Cesear Salad on the side!
