These scones are soft, fluffy and flavorful, like carrot cake… but in scone form! Topped with a drizzle of cream cheese icing, they are the perfect Easter treat!
INGREDIENTS
2 cups Unbleached Flour
¼ Brown Sugar
2 tbsp White Sugar
2 tbsp Baking Powder
¼ tsp Baking Soda
½ tsp Salt
1 ½ tsp Cinnamon
1/2 tsp Ginger
¼ tsp Nutmeg
½ cup Cold Butter or Margarine
1 cup Carrot, grated
¾ cup Buttermilk (to make your own buttermilk, simply add 1 ½ tsp of white vinegar to your milk)
1 tsp Vanilla
Optional:
¼ cup chopped Walnuts or Pecans (inside or on top)
Cream Cheese Icing:
1 tbsp soft Cream Cheese
1 tbsp Cream (10%)
¼ cup Icing Sugar (or so, add more if icing needs to be thicker)
½ tsp Vanilla
INSTRUCTIONS
Preheat oven to 400F, line a baking sheet with parchment paper and set aside for now.
In a medium sized mixing bowl combine together flour, sugars, baking powder, soda, salt and spices whisk it all together. Now using your box grater, grate the butter or margarine, be sure to scrape all the fat from the inside when you finish. You can also use the box grater to grate up the carrot too (just grate it all right into the flour bowl, as it will save on dishes!).
Mix it all together using a rubber spatula, breaking up any larger chunks of fat as you go, then make a well in center of the flour mixture and add in the buttermilk and vanilla. Stir to combine, until dough starts to come together.
Pour mixture out onto a lightly floured surface and using your hands continue to form together until a loose ball forms. Flatten dough into a rough circle that is about 2 inches thick. Then cut into 8 equal wedges and place on your parchment covered baking sheet. Using a tablespoon of milk lightly brush the tops of each scone. Place baking sheet in the oven and bake for 12-15 minutes. Let cool completely before icing!
To make the icing:
In a small bowl combine the cream cheese and creamer, using a whisk combine these two until smooth. Then add in the vanilla and icing sugar and continue whisking until smooth (if you feel like your icing needs to be thicker just add a few tablespoons of icing sugar until you have the correct consistency). Then lightly drizzle over each cooled scone and enjoy!
