The simplest thing is sometimes the best! These wraps are filled with freshly made cesear salad & grilled chicken, you can even add extra cheese if you like… or keep it simple! Paired with a handful of potato wedges, this makes for one easy weeknight dinner!
INGREDIENTS
1 pkg. Chicken Cutlets
1-2 tbsp Olive Oil
Montreal Steak Spice
4-6 Soft Flour Tortillas
1-2 heads of Romaine Lettuce (depending on the size of lettuce head), cut & washed
½ English Cucumber, diced
½ cup Parmesan Cheese
½ cup Bacon Bits
Dressing:
3 tbsp Mayo
3 tbsp Olive Oil
½ Lemon, juiced or 2 tbsp Red or White wine vinegar
2-3 squirts Worshistershire Sauce
1 tsp Dijion Mustard
1-2 cloves Garlic, pressed
½ tsp Black Pepper
INSTRUCTIONS
Begin by heating up griddle or grill, spray lightly with non-stick spray and the place chicken cutlets on the grill. Drizzle with a few tablespoons of olive oil and Montréal steak spice. Turn about 5-8 minutes through cooking and season the other side, and cook for another few minutes. I usually take the cutlets off the grill and let them finish cooking in the oven (set to about 400F or so) or feel free to finish them off on the grill if you so desire.
To make the salad, assemble washed romaine in a salad bowl, top with cucumber, parmesan cheese & bacon bits. Then in a small bowl, combine dressing ingredients and whisk together. I like using a small silicon whisk but a fork works well too! Mix until smooth. Pour 3/4s of the dressing over the salad and toss. With remain dressing add 1 tbsp of Cream and whisk until smooth. Use this to add a little extra sauce to your wraps!
To assemble:
Take a soft flour tortilla and fill with Cesar salad and some of that grilled chicken and a drizzle of that sauce you made! Feel free to add more cheese, mustard or even a few cherry tomatoes. Enjoy! Especially good with a side of Potato wedges.
