The perfect autumn tea companion! These fluffy scones are full of chai flavors and are topped with a vanilla & cinnamon icing.
INGREDIENTS
Scones
3 cups All purpose flour
1/2 cup Brown Sugar
1/4 White Sugar
1 tbsp Baking Powder
1 tsp Cinnamon
! tsp Dry Ginger
1/4 tsp Cloves
1/4 tsp Nutmeg
1/2 cup cold butter or margarine
1 large Egg
1 cup Milk or milk alternative
1 tsp Vanilla Extrac
Vanilla Cinnamon Icing
1 cup icing sugar
1-2 tbsp cream or milk alternative
1 tsp vanilla
1/2 tsp cinnamon
INSTRUCTIONS
In a large mixing bowl combine all dry ingredients, stir to combine. Using a box grater, grate cold butter or margarine into dry mixture. Stir to incorporate, breaking up larger chunks if necessary. Preheat oven to 400 f.
Make a well in center of dry mixture, crack egg and place in well with milk and vanilla extract. Stir to combine, adding a touch of extra milk if neccesary. A rough dough should begin to form. DO NOT OVER WORK DOUGH! Once mixture starts to come together, turn dough out onto floured surface and form into a large flat circle. Prepare baking tray with parchment. Then take a sharp knife and cut dough into equal pie segments. Place segments on prepared baking sheet with room between each scone. Bake in oven for 10-15 minutes until golden brown and fluffy.
Remove from oven and allow to cool on pan for about 10 minutes. Then move to wire cooling rack, place parchment under cooling rack.
While scones are cooling combine icing ingedients in a small bowl, using a whisk (I like the little silicon ones you can pick up at grocery store) combine ingredients until is forms a smooth icing. Be sure not do add to much liquid as it will result in very runny icing! Less is more in this situation. You can always add an extra splash if needed. (IF you do add to much liquid, just add more icing sugar until you have thickened it up again.)
Once scones are cool to touch, drizzle icing over scones and allow to set. Enjoy with a warm cup of tea or coffee! These scones can be stored in a container for about a week, though i doubt they will last that long!
