This one pot dinner is similar to your store bought Hamburger helper but its completely made from scratch and much tastier! This savory dish has noodles swimming in a tasty tomato sauce with chunks of ground beef, red peppers and tons of cheese.
INGREDIENTS
1/2 lb Ground Beef
2 tbsp Olive oil
1 Onion, diced
3-4 cloves Garlic
1 tbsp each of Basil, Oregngo, Chili powder, McCormick's Roasted Garlic & Red pepper
1 tbsp White sugar
1 Bay leaf
1 tsp Salt & Pepper
2 28 oz. cans Chopped Tomatoes
1 15 oz can Tomato Sauce
2 1/2 cups Macaroni Noodles
2 cups Water
1 Red Pepper, chopped
1 cup White Cheddar Cheese, grated
INSTRUCTIONS
Begin by heating the olive oil in a Dutch oven or a large pot (with lid) on medium heat. Add in diced onions and ground beef, using a wooden spoon break up ground beef into smaller chunks. Cook until ground beef is browned and onions are translucent, add in pressed garlic and the spices.
Open up all the tins of tomatoes and add to the pot, add sugar and then give it a nice good stir to get everything combined. Place lid onto pot and let simmer on a low-medium heat for about 30 minutes, stir a few times throughout to prevent sticking.
Remove the lid and add in macaroni and water, cook until the noodles are soft. The noodles may take double the time to cook noodles as usual... But they will be tasty and your sauce will be nice and thick! Be to sure to stir often while noodles are cooking to prevent sticking. Add in the chopped red pepper and cook for about 5 for minutes, taste the sauce and adjust the seasoning, you may want to add more salt & pepper. Finally add the grated cheese and sir a final time. Then enjoy, feel free to add extra cheese and a piece of garlic toast!
This refrigerators well and will last about 4-5 days properly stored in a ziploc container. Or freeze the extra and enjoy later!
