Chicken Burritos


A quick dinner that is oh so tasty! With a quick Mexican inspired marinade, refined black beans, rice & whichever other fixings take your fancy! Avocado, Salsa, Sour cream, Tomatoes, fresh Peppers, lettuce, grated Cheddar Cheese and or hot sauce! Roll it up and enjoy! We love having this for dinner with a side of Tatter Tots! This recipe can also easily be made for a vegetarian! Just sub in an Egg for the Chicken or try marinating Firm Tofu!


INGREDIENTS

Chicken Marinade:

2 Chicken Breasts, sliced in half width wise

2-3 tbsp Olive oil

1 Lime or Lemon, juiced

1/2 tbsp Chili Powder

1/2 tbsp Roasted Garlic & Red Pepper

1 tsp Cumin

1/2 tsp Salt & Pepper, each

1/2 tsp Oregano

1/2 tsp Paprika

1/4 tsp Chili Flakes


Refined Black Beans:

1 can of Black Beans, drained & rinsed

2 tbsp Olive oil

1/2 small Onion, diced

1-2 cloves Garlic, pressed

1/2 tsp each of Chili powder, cumin, oregano

1/2 tsp Salt & Pepper Each


1/2 cup White or Brown Rice Cooked

Other Toppings:

Lrg. Tortillas, either White or Whole Wheat, Avocado or Guacamole, Pico de Galo or jarred Salsa, Sour cream, Tomatoes, fresh Peppers, lettuce or chopped Spinach, grated Cheddar Cheese and or hot sauce!


INSTRUCTIONS

Chicken Marinade:

Begin by cutting your Chicken Breasts, width wise so that instead of 2 large breasts, you have 4 smaller cutlets. Place Chicken cutlets in a medium bowl. Add in the olive oil, lime or lemon juice and the spices. Let sit for about 10 minutes or so.

These can either be cooked on a hot grill or in a frying pan, cook until no pink remains (about 10 minutes or so) flipping to cook evenly.


Refined Black Beans:

While the Chicken is marinating, chop up 1/2 an onion, in a heated pot add olive oil and cook onion until translucent, add in garlic and cook for another minute or so. Add in the drained & strained Black beans, lime juice, spices and salt & pepper. Cook together on low heat until warmed through. You can leave your beans whole or mash them up a but with an immersion blender or a potato masher or even a fork.


Build that Burrito:

Place a warmed wrap on you plate and fill it with Chicken, Refined Black Beans, Rice, Avocado or Guacamole, Pico de Galo or jarred Salsa, Sour cream, Tomatoes, fresh Peppers, lettuce or chopped Spinach, grated Cheddar Cheese and or hot sauce! And Enjoy!
