Cacciatore means "hunter" in Italian, alla cacciatora refers to a meal prepared "hunter-style" with onions, fresh basil, tomatoes, often bell peppers, and sometimes wine. An easy pasta dinner & ready in under an hour!
INGREDIENTS
6 Bone-less Skin-less Chicken Breasts
2 tbsp Olive Oil
Salt & Pepper
1 pkg. Spaghetti Noodles
2 tbsp Olive oil
½ onion, diced
3-4 cloves Garlic, pressed
½ pkg. Cherry Tomatoes, sliced in half
1 can Tomato Sauce
1 can Tomato Paste
1 Pepper diced (red, orange or yellow works)
1 handful of Fresh Basil or 1-2 tsp dry
1 tbsp McCormicks Roasted Garlic & Red Pepper
Salt & Pepper
Parsley
INSTRUCTIONS:
To begin heat a deep sided sauce or frying pan, adding olive oil, chicken and season with salt & pepper. Cooking until chicken starts to brown and is no longer pink in the middle.
Remove from the pan and set aside for now. In that same pan heat another few tablespoons of olive oil and add diced onions and cook for a few minutes. Adding in a splash of water to help scrape up chicken bits and to avoid and burning. Then add in pressed garlic and cook for another minute.
Next adding in the sliced cherry tomatoes & spices, let this cook for another few minutes. Now you can add in the cans of tomato sauce and let it all simmer for about 30 minutes or so, stirring every so often ( I often place a lid on the pan to avoid getting splatters).
Now you can add back in the chicken as well as the diced peppers & chopped basil. Let mixture cook for about 5-10 minutes until chicken is warmed through and peppers are tender.
Set a large pot of salted water to boil for your spaghetti noodles. Cook the noodles according to the package. But don’t start cooking them until nearer to the end of the sauce making so they stay fresh and warm! Serve sauce over noodles and top with parmesan cheese and a little Garlic Toast & Enjoy!
