An easy Italian casserole style dinner, with Penne noodles swimming in a from scratch herbed tomato sauce and chunks of chicken and then topped with 3 different cheeses and then baked to perfection. Another great potluck dish or for a chilly winter night.
INGREDIENTS
1 box Penne Noodles
1-2 tbsp Olive oil
1 pkg. Chicken Fillets, cut into chunks
1/2 tsp Salt & Pepper
Sauce:
1 small onion, diced
3-4 cloves garlic, pressed
1 28 oz. can Diced Tomatoes
2- 389 ml can Tomato Sauce
1 tbsp Sugar
2-3 tsp Basil
1 tsp Oregano
2 tsp McCormick's Roasted Garlic & Red Pepper
1 tsp Salt & Pepper
Topping:
1 cup each of Aged Cheddar and Mozerella, grated
1/2 cup Parmesan, grated
INSTRUCTIONS
Start by setting a large pot of water to boil, once water is boiling add noodles and cook according to package. Strain and pour a dash of olive oil over noodles, set aside until sauce is ready.
To cook chicken add a tablespoon or so of olive oil into medium high sided frying a pan. Add chicken and salt & pepper and cook until lightly browned (for about 5 minutes or so). Once chicken is cooked remove from pan and set aside in a bowl for later.
In that same frying pan add another tablespoon or so of olive oil, then add onions and cook for a few minutes until onions begin turning tranculent. Then add pressed garlic and cook for a few more minutes until fragrant.
Next open up the cans of diced tomatoes and sauce, add to the pan and stir to incorperate. You can also add in the spices now too! Give your sauce a good stir and then place lid onto pan and allow sauce to simer for about 20-30 minute or so. Now that your sauce has simmered, taste and adjust seasoning if needed. The next step is to add it all together! I usually use the large pot i cooked the noodles in, so begin by adding noodles, cooked chicken and tomato sauce, stir to combine.
Then you will need a large casserole dish, grease lightly with non-stick spray and then pour in your tomato sauce-noodle mixture. Now top noodle with all that grated cheese! Bake in an oven heated to 375 F until cheese is all melted, gooey and delicous. Serve immediately with garlic toast and enjoy!
