These mini Banana muffins are moist and delicious with chunks of chocolate! It's most certainly a yummy way to use up those browning bananas & are so easy to make!You can also add a chocolate swirl if your feeling extra chocolate-y!
INGREDIENTS
1 cups White Flour 3/4 cup Whole Wheat Flour
½ cup Granulated Sugar
2 tsp Baking Powder
½ tsp Sea Salt
¼ cup Sunflower oil
¼ cup Milk (any kind)
3 medium brown Bananas
1 tsp Vanilla Extract
½ cup Chocolate Chips
OPTIONAL: 2 tbsp cocoa powder
INSTRUCTIONS
Prepare a mini muffin tray (I have two and I just spray them with non-stick spray!) OR a medium sized muffin tin with 12 medium liners & set oven to preheat at 400°.
Combine first 4 dry ingredients in medium mixing bowl.
In a stand up mixer bowl or with a hand held mixer, mash bananas, then adding oil, milk & mix until nicely combined, add vanilla and stir.
Next take bowl of wet ingredients and add to dry, do not over mix! Stir lightly until flour is almost incorporated. Add chocolate chips!
Doll out batter into muffin tin & bake for 15-20 minutes until inserted tooth pick comes out clean. Enjoy!
OPTIONAL: Add 2 tbsp of cocoa, mix lightly until cocoa is blended but batter does not turn color. & follow the remaining instructions above!
