Chocolate Oat Bars

A great cookie bar, with tender oats and creamy chocolate. Great for lunches and potlucks.



INGREDIENTS

1 1/2 cups Butter or Margarine, softened

3/4 cup White Sugar

1 1/2 cup Brown Sugar

2 Eggs

2 cups All Purpose Flour

3 cups Rolled Oats

1 tsp Baking Soda

1 tsp Salt

1 cup Sweetened Condensed Milk

1 1/2 cups Semi-sweet Chocolate Chips

1 tsp Vanilla Extract


INSTRUCTIONS


In a upright mixer using paddle attachment cream 1 cup of the softened butter until light and fluffy.

Add in sugars one at a time, scrape sides of bowl with spatula to help incorporate.

Add eggs in one at time, mixing until combined.

In a large bowl measure flour, baking soda salt and rolled oats. Mix lightly, add dry mixture to the butter mixture slowly until completely combined.

Spread 3/4 of mixture into a greased 9x13 pan.

In a double boiler combine 1/2 cup of remaining softened butter, condensed milk, chocolate chips and vanilla. Melt ingredients together, stirring often until mixture come together.

Pour chocolate mixture over oat dough in pan. Drop the remaining bits of oat dough over chocolate mixture, press down slightly on drops

Bake at 350 f for 25-30 minutes, until tooth pick comes out with very few moist crumbs.

Let cool completely before serving.
