This recipe is for a double batch, so be sure to have two loaf pans or it can also be made in a bundt cake pan!
1 cup melted butter
1 cup unsweetened cocoa powder
2 ½ cups all-purpose flour
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp kosher salt
2 cups sugar
3 large eggs
2 tsp pure vanilla extract
4 cups grated zucchini (from 1 extremly large or 3 small/medium)
DIRECTIONS
1. Preheat oven to 350°. Spray two 9"-x-5" loaf pan with non stick Vegetable spray.
2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, cinnamon, and salt.
3. In another medium bowl whisk together eggs. Then add melted butter, vanilla & grated zucchini, stir to combine. Add wet mixture in with the flour mixture, using a plastic spatula stir gently until incorporated. Do not over mix! Transfer batter to prepared pan. Sprinkle a handful of chocolate chips on top of each loaf if you desire
4. Bake until a toothpick inserted into center comes out clean, about an hour.
5. Let bread cool in pan 10 minutes, then invert onto a wire rack to cool completely.
