Cinnamon & Brown Sugar Coffee Cake


This is a classic coffee cake topped with a delicious brown sugar crumb, perfect for a coffee date with friends or as a quick dessert after dinner! It is especially good warm and right out of the oven!


INGREDIENTS

Cake:

1/2 cup Butter or Margarine, at room temperature

3/4 cup White Sugar

2 Eggs, room temperature

2 tsp Vanilla Extract

1/2 cup Full Fat yogurt or Vanilla Yogurt

2 tbsp Milk (any kind works)

1 1/3 cup All Purpose Flour

1 tsp Baking Powder

1/4 tsp Baking Soda

1 tsp Cinnamon

1/2 tsp Salt


Crumb Mixture:

1/2 cup Butter or Margarine, melted

2/3 cup Brown Sugar

2/3 cup All purpose flour

2 tsp Cinnamon


Icing:

1/2 cup Icing Sugar

1-2 tbsp Milk

1/2 tsp Vanilla Extract


INSTRUCTIONS

Begin by preheating oven to 350 F and prepare a square 8 inch baking pan with baking spray. Set aside for now.


Begin by creaming together the room temperature butter (or margarine) with sugar either with an electric hand mixer or upright mixer with paddle attachment. Add on the eggs one at a time, scraping the bowl with a rubber spatula as you go. Add in the vanilla extract, creaming on a medium speed until smooth. Add in the sour cream or yogurt and beat again until sooth and creamy.


I another bowl measure out flour, baking powder and soda, cinnamon and salt. Mix lightly to combine. And then slowly add this mixture in with the butter mixture. Do not over mix, the batter will be a little bit lumpy and quite thick.


Spread the cake mixture out into the prepared baking pan. Top with crumb mixture.


Crumb Mixture:

Combine melted butter or margarine with with brown sugar, flour and cinnamon, stirring until it makes a smooth sort of paste. Spread this over the cake evenly and then using your fingers or a spoon push the crumb mixture down into the cake so that the two layers mix together, but do not completely mix through.


Bake in oven for 30-35 minutes until golden brown and its smells heavenly. As well as a inserted tooth picks comes out clean. Serve immediately with coffee or a cup of tea and enjoy! Lasts about a week covered with a lid or plastic wrap (if it even lasts that long!)


Add the icing if you like! Its quite good either way! To make icing just combine listed ingredients until smooth and drizzle over top once cool!
