Craving those tasty IKEA style Swedish Meatballs? Give this tasty recipe a try and make em in the comfort of your own home!
INGREDIENTS
2 slices of toasted bread, small diced
3 tbsp milk
1 ¼ pound lean ground beef
1 large egg
1 tsp salt + black pepper
3-4 garlic cloves, pressed
1/2 tsp Onion powder
1/2 tsp Thyme
½ tsp ground allspice
¼ tsp ground nutmeg
2 tbsp Worcestershire sauce
3 tbsp Butter
1 bay leaf
2 tbsp flour
2 tsp thyme
1 carton beef stock (roughly 3 cups)
½ cup sour cream
1 tsp Dijon mustard (or grainy Dijion works)
For serving :Egg noodles or Mashed potatoes, for serving
INSTRUCTIONS
Begin by preheating oven to 400 F and prepare a baking sheet with parchment paper. Set aside for now.
Next, toast bread for 3-4 minutes, then chop or dice it up quite small. And add it to a small bowl, pour the milk over the bread and stir with a spoon so that the bread soaks up all the milk, let sit 5 minutes.
Now in a medium sized mixing bowl, add the ground beef, bread mixture, an egg, 2 cloves of garlic, 1 tbsp Worcestershire, salt, pepper, onion powder, nutmeg, thyme and allspice to the bowl and mix until just combined. Shape into 18-22 meatballs that are about 1- 1 ¼ inch in diameter. On your prepared baking sheet covered with parchment, place meatballs on sheet and bake at 400° for 10-15 minutes until browned.
To make the gravy Add the 3 tbsp of butter to the skillet on medium-low heat. Add in 2 cloves of pressed garlic, cook for 1 minute, Then sprinkle the flour in and whisk for 1-2 minutes or until it turns golden brown. Slowly pour the beef broth in while you whisk. Lower the heat, whisk in the sour cream until it dissolves completely.
Add the pressed garlic, thyme, mustard, and Worcestershire sauce and let come to a gentle simmer before lowering the heat. Allow sauce to thicken for 6-10 minutes or until it reaches desired consistency. Taste and adjust with additional mustard as desired. Add meatballs & drippings to saucepan in when there are 4 minutes remaining. Keep in mind the sauce will thicken as it sits, so if you aren’t serving right away, consider leaving it a little thinner. Serve on top of egg noodles or mashed potatoes & roasted vegetables Top with fresh parsley if desired.
