Corn & Bacon Chowder



This is one luxurious soup, full of chunks of bacon, corn & tons of vegetables all in a creamy sauce. The perfect soup for any rainy day! It pairs well with Cheddar & Herb Biscuits or a loaf of Fresh Irish Soda Bread.


INGREDIENTS

1 package of Bacon (thick cut or regular works), chopped

1 large Yellow Onion

3-4 Carrots, diced

3-4 sticks Celery, diced

3-4 cloves Garlic, pressed

1 tbsp Thyme

1 tsp McCormick’s Roasted Garlic and Red Pepper

1 tsp Salt & Pepper

1 Bay Leaf

½ cup Flour

4 cups Milk (preferably 2%)

2 cups Chicken Stock

½ cup 10% Creamer (optional, just makes it more creamy)

3-4 Red Potatoes, skin on, rinsed, diced

1 can Cream of Corn

1 cup Frozen Corn


INSTRUCTIONS

Begin by heating up your largest best soup pot and toss in the chopped bacon. Cook for 10-15 minutes until crispy, stirring often to avoid sticking. Once the chopped bacon is cooked remove from pot and set aside. Leaving the bacon grease in the pot.


Add in the diced onion, carrots & celery (also known as a mirepoix) and cook the vegetables in that bacon fat until tender soft. Be sure to stir often and feel free to add a few splashes of water or stock to help deglaze the bacon fat. Add in the pressed garlic, thyme, roasted garlic & red pepper, salt & pepper and the bay leaf and mix it all up. You can now add in the ½ cup of flour and mix it through until no white remains. Quickly add in the milk and stock and using a large whisk, mix it all together and make sure there is nothing stuck at the bottom of the pot. Allow this mixture to come to a simmer.

Add in the corn and diced potatoes and let the soup continue simmering for about 30 minutes or so. Again be sure to stir often as the soup will thicken as it simmers. Taste for flavor and adjust spice as needed (it might need a dash or to more of salt & pepper.) Now you can also add in the cooked bacon and the creamer if you so desire. Cook for another few minutes, test the potatoes to be sure they are cooked all the way through. Serve hot and fresh with your choice of Cheese & Herb Biscuit or Fresh Irish Soda Bread.
