Did you know it can only technically called Shepards Pie if it contains lamb or mutton? But either way it's a tasty casserole mixture topped with mashed potatoes, so how can you lose?
INGREDIENTS
6-8 Potatoes Red or Russet, washed & cut into chunks
3 tbsp Butter
1 tbsp Cream Cheese
1 tbsp Sour cream & cream
½ tsp Salt & Pepper & Parsley
½ pound Ground Beef (or ½ ground beef&pork or even ground turkey works too!)
1 Onion, diced
3-4 Carrots, chopped
2-3 sticks Celery, chopped
2-3 cloves Garlic, pressed
2-3 tbsp Worcestershire Sauce
1 Bay leaf
3 tsp Thyme
1 tsp Rosemary
Salt & Pepper
½ cup Flour
1 small can Tomato paste
3-4 cups Beef Stock (or chicken stock depending on the ground meat you are using)
½ cup EACH Frozen Peas & Corn
INSTRUCTIONS
Begin by preparing potatoes and placing them in a large pot, filled 3/4s of the way with cold water and a pinch of salt. Set to boil and cook until potatoes are soft all the way through (they should break apart with a spoon). Drain and mash them up with butter, cream cheese, sour cream, cream, salt & pepper and a bit of parsley.
To make the beef mixture begin with a large heavy bottomed pot and add in beef, diced onions, chopped carrots & celery cooking until the beef is cooked throughout and the onions are translucent and the carrots and celery tender. Next adding in the garlic, Worcestershire sauce and listed spices. Allow this mixture to cook together and the flavors to co-mingle, stirring to combine. Then add in the flour and stir again to incorporated, no flour should remain so mix it in well!
Now you can add in the tomato paste and a bit more Worcestershire sauce if you like, as well as the beef stock. Allow this mixture to simmer for 20 minutes or so stirring often. Finally add in the froze peas and corn, cooking for a few more minutes until heated through.
In a greased medium to large sized casserole dish, fill the bottom layer with the beef mixture. Top with the creamy mashed potatoes and place in the oven set to 400F, cooking for 30 minutes or so until the mashed potatoes are browned and crusty. Remove from oven and let cool for a few minutes before serving as it will be hot! Serve with a side of fresh Irish Soda bread and enjoy!
