The perfect cookie to celebrate Easter with! A tender cookie filled with chocolate more chocolate and everyone’s favorite candy…. MINI EGGS!
INGREDIENTS
1 cup Butter or Margarine, softened
1 ½ cups White Sugar
2 Large Eggs
2 tsp Vanilla
2 cups White flour
2/3 cup Cocoa Powder
1 tsp Salt
¾ tsp Baking Soda
2 cups Mini Eggs (I save ½ cup or so to put on top before baking)
1 ½ cups Milk Chocolate, chopped
INSTRUCTIONS
To begin preheat oven to 350F and prepare to baking sheets with parchment paper. Set aside for now.
Then in your stand up mixer, cream butter until fluffy (3 minutes) then add in sugar and cream together. Be sure to scrape sides of the bowl with a spatula between mixings! Now then add in eggs, one at a time scraping in between and finally add in the vanilla.
In a medium sized bowl measure out flour, cocoa, salt and baking soda, mix lightly with a spoon. Add this dry mixture into butter mixture 1 cup at a time until the flour mixture is incorporated. Finally add in 1 ½ cups mini eggs and chopped milk chocolate. Mix one last time until chocolate is nicely combined.
Scoop out cookie dough onto prepared cookie sheets. I like using a 1.5 inch cookie scoop because the end up just the perfect mini size! Scoop 12 per cookie sheet, I like to lightly press on each ball so they end up a bit flatter, then add one or two of the mini eggs you saved on top of each cookie. Bake for 10 minutes, let cool on baking sheet for about 5 minute or so before transferring to a metal cooling rack. Repeat until all the cookie dough is used up! And Enjoy! Happy Easter!
