Fluffy Pumpkin Cookies with Cream Cheese Icing


The flufiest pumkin cookies complete with pumpkin spice and everything nice; these cookies

are almost like scones but with the sweetness of a cookie. Topped with a cream cheese icing they simply melt in your mouth!

The perfect October themed sweet treat!


INGREDIENTS

Cookies

2 1/2 cups Flour

1 tsp Baking Powder

1 tsp Baking Soda

1 tbsp Pumpkin Pie Spice

1/2 tsp Salt

1 cup White sugar

1/2 cup Brown Sugar

1 cup Pumpkin Pie Puree, canned

1 Large Egg

1 1/2 tsp Vanilla Extract


Frosting

1/2 cup Cream Cheese

1/2 cup Butter

2 cups Powered Sugar

1-2 tbsp Milk (Or Dairy free milk)

1/2 tsp Vanilla Extract


INSTRUCTIONS

To make cookies:

In a medium bowl whisk together flour, baking powder bowder and soda, pumpkin pie spice and salt. Set aside.

In your stand up mixer, using paddle attachment, cream together butter and sugars until light and fluffy. Scrape the bowl with a rubber spatula, then add pumpkin puree, egg and vanilla and mix thoroughly.

Add dry ingredients to wet ingredients half at a time and mix until combined. Use a cookie scoop to drop mounds onto a parchment covered baking sheet. Use the palm of your had to slightly flatten each mound.

Bake at 350 F for 12 minutes. Allow cookies to cool on pan for 5 minutes or so, then transfer to a wire cooling rack. Place a sheet of parchment beneath rack.


To make the frosting:

Cream together cream cheese and butter in mixer with whisk attachment. Then add in powdered sugar, milk and vanilla, mix until light and fluffy. Spread over cooled cookies. Enjoy!
