Fresh Eats Fluffy Pancakes

Wonderfully fluffy pancakes with a hint of sweetness. This recipe can be easily doubled to feed more people! Feel free to add blueberries or even chocolate chips!


INGREDIENTS


1 cup White Flour

1 tbsp White Sugar

2 tbsp Baking Powder

1/4 tsp Salt

1 cup of Milk

1 Large Egg

3 tbsp Melted Butter


INSTRUCTIONS


In a large mixing bowl combine flour, sugar, baking powder & salt. Stir to combine, creating a well in center.

Place large frying pan or griddle on stove top, turn heat to medium and allow to warm.

Spray with non-stick cooking spray.

In a separate medium bowl add egg and whisk until frothy, add milk and continue to whisk until blended. Once combined pour wet ingredients into dry well. Blend together, allowing lumps to remain. This will make your batter fluffy! Pour melted butter into pancake batter, fold gently.

Spoon batter onto preheated frying pan, (place sprinkling of blueberries or chocolate chips, if you so desire) onto each pancake. Allow to cook until bubbles stop forming and outside edges of pancake change color.

Flip and allow to cook for 1-2 more minutes.

Repeat until all of the batter is finished.

Enjoy pancakes with butter, maple syrup &fruit!
