Fresh Eats Waffles

A wonderfully sweet & fluffy waffles capable of entertaning either sweet or savory toppings.

Or even plain with a bit of butter & maple syrup.


INGREDIENTS


3 cups White flour

4 tbsp White Sugar

2 tbsp Baking powder

1 tsp Salt

4 Eggs – Separate Whites & Yolks

3 cups Milk

1 tsp Vanilla extract

½ cup Melted Butter






INSTRUCTIONS

In a large mixing bowl combine flour, sugar, baking powder & salt. Create a well in the center. REMEMBER to turn on Waffle iron so it is ready for later!

Pour egg whites into upright mixer & whisk attachment. Whip until egg whites form stiff peaks.

In a medium bowl pour egg yolks, milk & vanilla. Whisk together until frothy. Pour wet mixture into the well of the dry mixture, fold mixture with a large spatula until flour has been incorporated.

Pour melted butter into waffle mixture, fold gently until butter is incorporated. The add the egg whites and carefully fold into batter. Do NOT over stir the batter! It should be fluffy!

Ladle waffle batter into pre-heated waffle iron (I like to use a ¼ cup measuring cup to spoon my waffle batter, but every waffle iron is different remember! Try experimenting with different sizes to see what works for you.). Close lid & wait. Waffles will puff up as they cook & make funny whistling sounds… this is totally normal.

Cook waffle for 5-8 minutes depending on the level of crispness you desire! Most waffle makers have a heat setting, which can be adjusted to your liking.
