Are you looking for a healthier tastier chicken burger option? Well look no further, as I have finally perfected my recipe!
INGREDIENTS
1 pkg. Chicken Breasts, cut in half length wise
Salt & Pepper
1 ½ cups Panko or Bread Crumbs or Extra crispy breading mixture
1 cup White flour
1 tsp Thyme, Paprika, Oregano, Chili Powder &
McCormicks Roasted Garlic & Red Pepper
½ tsp Salt & Pepper
1 cup of 10% Creamer or milk
1-2 cups Sunflower oil for frying
INSTRUCTIONS
Begin by slicing chicken breast in half length wise, if a few of your pieces are a bit large I like to to cut them in half as they fit better on your bun later. Separate out pieces and evenly salt & pepper the top and bottom. Set aside for now. Set oven to 400F.
In a large Ziploc bag add the breading mixture of your choice, flour and spices, close bag and shake it up! Next pour creamer or milk into a medium sized bowl. And set out a baking tray covered with parchment paper, then place a metal cooling rack on top. If you don’t have on that is OK but your breading might not stay on as nicely.
Set up your items in a row in which you will use them, I start with chicken, then the bowl of milk, then the Ziploc bag of breading mixture and finally your baking tray. Using tongs place a few pieces of chicken in the milk, make sure they are nicely covered, then using your tongs transfer them to the ziploc bag, close the seal on the bag and give it a good shake! Again using your tongs remove chicken pieces from breading mixture and carefully set on your baking tray set up, being sure not to remove any breading from chicken pieces. Repeat this process until all your chicken is nicely breaded!
Next heat a non-stick frying pan up on stove top, adding in a cup of sunflower oil (you can always add more as you need it!) or enough to evenly cover the bottom of your pan. Again using you tongs place 3 or 4 chicken pieces into pan and cook until golden brown, then turn and cook the other side until it is golden brown too! Continue process until all the chicken pieces are golden brown, placing the cooked pieces bake onto your prepared baking tray. Place tray into oven and cook for 10 or so more minutes until the juices run clear and inserted thermometer reads 160F. Enjoy on a fresh brioche bun with spinach or lettuce, tomatoes, pickles, bacon or my Fresh Eats Garlic Mayo! Also tasty with a side of my Wedge fries!
