Ginger & Molasses Cookies

Because theres nothing like a classic Ginger Molasses Cookie. A tender spicey cookie rolled in a touch of white sugar and baked to perfection. The absolutely perfect way to celebrate the Holiday season!


INGREDIDENTS

1 Cup unsalted butter

1 Cup demura brown sugar

1/3 Cup molasses (spray the inside of the measuring cup with vegetable spray before filling!)

1 egg

2 1/3 Cup flour

2 tsp baking soda

1 1/4 tsp ground ginger

1 tsp ground cinnamon

1/4 tsp salt

1/4 tsp nutmeg

1/4 cup white sugar, in a small bowl


INSTRUCTIONS


Begin by preheating the oven to 350 degrees Fahrenheit. Prepare 2 baking sheets with parchment paper and set aside.


In your upright mixer cream butter for 3 minutes until fluffy. Next adding in the brown sugar, mix until combined, using a rubber spatula scrape down the sides and mix again for about 30 seconds. Add in the molasses now, be sure spray your measuring cup with vegetable oil and it will plop right out like a dream! Mix for another minute until combined, remembering to scrape down the sides in between mixings!


In a separate medium sized bowl measure out flour, baking soda, ginger, cinnamon, salt and nutmeg. Mix lightly, then add half of this flour mixture into the butter mixture and mix until combined. Scrape down the sides, then add the 2nd half of the flour mixture, mixing again until combined. Now using a small cookie scooper, scoop out dough balls, then roll them through the white sugar. Place on a cookie sheet with space between! Bake for 11-12 minutes until fluffy & fragrant. Once baked let cool on the cookie sheet for a few minutes then move to a cooling rack, then enjoy!
