Gingerbread Scones



Everything you love about gingerbread cookies baked right into a scone! With the perfect amount of molasses and ginger, cinnamon and cloves & topped with a light vanilla glaze these are a delicious addition to your afternoon tea or coffee with a friend during the holiday season!


INGREDIENTS

2 ½ cups Flour

½ cup Brown Sugar

1 tbsp Baking Powder

1 tsp Ground Ginger

¾ tsp Cinnamon

½ tsp Salt

1/8 tsp or a pinch Ground Cloves

½ cup Cold Butter

1 large Egg

½ cup Buttermilk (if you don’t have any on hand simply add 1 tsp of white vingear to ½ cup of regular milk or %10 creamer)

¼ cup Molasses


Glaze:

1 cup Icing sugar

½ tsp Vanilla Extract

1-2 tbsp Cream or milk


INSTRUCTIONS

Begin by preheating oven to 400F, then in a medium sized mixing bowl measure out the dry ingredients, stir lightly to combine. Then taking your box grater, grate the cold butter in the dry ingredients. Be sure to use very cold butter or else this will be very messy and not work out well at all! Also be sure to scrape the inside of the grater to remove any remaining behind. Now using a large spatula mix the butter into with the dry, and be sure to break of any large chunks that may have formed.

In a smaller bowl, crack egg and whisk until smooth, then add in buttermilk and molasses. Whisking the mixture until smooth. Then making a small well in the dry mixture and pour the wet into the dry. Using your spatula combine other until a soft dough starts to form. Lightly sprinkle a handful of flour on your counter and turn dough out onto it. Using your hands shape dough into a 2 inch thick circle, then using a sharp knife cut dough into 8 equal wedge segments. Prepare a baking sheet with parchment, then place each segment on baking sheet with room between, as these scones will grow in size! Bake for 15 minutes, the remove from oven and allow to cool for about 10 minutes. Then transfer to a wire cooling rack with parchment covered tray below. Let cool for at least another 15 minutes. Once the scones are cool you can whip up the icing! Simply measure out the listed ingredients and whisk until smooth. If you added to much cream or milk, just add another few tablespoons of icing sugar and continue whisking until smooth. Drizzle over cooled scones & enjoy!
