Greek Wraps


Your choice of Greek style Meatballs or Garlic Lemon & Oregano Marinated Grilled Chicken on a soft pita wrap. Complete with fresh Greek Salad and your choice of Hummus or Tzatziki.


INGREDIENTS

1 pkg. Soft Flat Pita bread (medium sized), Hummus & Tzatziki

Greek Meatballs:

½ pound Ground Beef

½ Lemon, juiced

2 tbsp Olive Oil

3-4 cloves Garlic, pressed

1 tsp oregano

1 tsp each Salt & Pepper


Garlic Lemon & Oregano Grilled Chicken

1 pkg. Chicken Cutlets

1 Lemon, juiced (with lemon zest to if you like)

2 tbsp Olive oil

3-4 cloves Garlic, pressed

1 tsp Oregano

½ tsp Parsley

1 tsp each Salt & Pepper


Greek Salad:

½ a large English Cucumber, cut into small wedges

1 Red or Orange Pepper (Yellow will work to but not as pretty), cut into small triangles

1 pkg. Cherry Tomatoes, sliced in half

¼ Red Onion, diced

½ container Feta Cheese, broken into chunks

½ cup Kalamata Olives

1 Lemon, juiced

2 tbsp Olive oil

1 tsp Oregano

¼ tsp Salt & Pepper

1-2 cloves Garlic, pressed (optional)


INSTRUCTIONS

Greek Style Meatballs:

In a large metal mixing bowl combine ground beef, lemon juice, olive oil oregano, mint and salt & pepper. Using your hands mix ingredients thoroughly. Prepare a baking sheet with parchment paper & preheat oven to 400F. Using your hands or hand held baller, make meatballs until no mixture remains. Bake for about 25 minutes or so until golden brown (they may need to be flipped over halfway though cooking) and cooked all the way through.


Garlic Lemon & Oregano Grilled Chicken:

Place chicken cutlets in a medium sized bowl and drizzle with olive oil, lemon juice (& zest) adding garlic, oregano, parsley and salt & pepper. Mix together and the place bowl in the fridge and let marinate for at least 30 minutes before grilling.

Heat griddle or BBQ grill and spray with a bit of non-stick cooking spray. Grill Chicken and cooked all the way through (internal temperature should be over 165F). If you are using a griddle you may want to grill till mostly done and finish in the oven.


Greek Salad:

In a salad bowl combine cucumber, peppers, sliced cherry tomatoes, diced red onion, chunks of feta cheese, Kalamata olives, juice from one lemon, olive oil, oregano and salt & pepper. Mix until nicely combined. Serve immediately and enjoy!


To make wraps:

Take a pita and do a layer of hummus & Tzatziki, Greek salad and then your choice of meatballs or grilled chicken. & enjoy! If your only cooking for 1 or 2 people you may want to just choose one meat and make only about half the amount of salad. However this does make yummy leftovers for the next day!
