A simple grilled Chicken Sandwhich with your choice of fresh mango or fig jam & caramalized apples, pilled up on a toasted chibata bun with garlic herb mayo, spinach and creamy brie cheese. Whichever sandwich you choose, I guarantee it will be absolutely delicious!
INGREDIENTS
4 large freshly baked Chibata Buns (I got mine at the Italian Centre shop), sliced in half
1 pkg. Chicken Breast, sliced in half
Olive oil
Montreal Steak Spice
1 wheel of Creamy Brie
1 pkg. Spinach
1 batch of Fresh Eats – Garlic Herb Mayo
Mango Sandwich: Needs freshly sliced mango
Fig Sandwich: Needs Fig Jam (can also be found at the Italian Centre) &
Caramelized Apples : 2 peeled, cored & sliced apples, 1 tbsp Brown Sugar, 1 tbsp Butter, ½ tsp Cinnamon, ¼ tsp Salt
INSTRUCTIONS
Begin by grilling chicken, either on a real grill or BBQ or if you don’t have one, I have a griddle with a grill side that works just as well! Spray grill with non-stick spray and lay chicken cross-wise to get those beautiful grill marks! Sprinkle with olive oil and Montreal steak spice, cook, flip and repeat. Have oven heated to about 400F, place grilled chicken on a plate or baking sheet and finish in oven.
Meanwhile, place sliced chibata buns on a parchment covered baking sheet and place in heated oven for 5-10 minutes until buns become lightly crisp. Remove toasted buns from the oven and spread a few tablespoons of garlic herb mayo over the bottom half of the bun. You can also remove Chicken from the oven as well, but be sure it is cooked all the way through (use a thermometer to be sure, it should read 165 F). Start with a layer of spinach, then grilled chicken.
If your making the Mango Sandwiches simply layer the fresh mango on top.
To make the Fig & Caramelized Apples Sandwiches you will need to make up a batch of caramelized apples, the ingredients are listed above. Simply mix it all up in a bowl, the place on a small baking sheet and bake at about 400F for 5-10 minutes until soft & fragrant. So once the apples are cooked place them on top of the grilled Chicken and spread the top half of the bun with fig jam.
Finally slice up the creamy brie, laying 3-4 slices on top half of the bun. Place the top half on top the bottom half and push down slightly, you can also use a large sandwich pick to keep them from sliding around if need be. Place tray bake into the oven and warm sandwiches for about 5 minutes or so, be careful not to leave them in to long or the brie will melt to much and run all over the place!
Remove from the oven and slice in half, serve hot and fresh with a side of crisp skinny fries or a fresh salad! Enjoy!
