A succulent Pork Tenderloin coated in a light marinade filled with herbs, garlic, honey, a little olive oil and orange juice and a few sweet apples too! This meal cooks quickly and is quite tasty with a side of potatoes, salad or roast vegetables. An easy, grown up weeknight dinner or great for when you have guests for dinner and you want to WOW them with a simple, tasty meal.
INGREDIENTS
1 pkg. Pork Tenderloin (There should be 2 good sized tenderloins to work with)
2 tbsp Olive oil
2-3 tbsp Honey
2 tbsp Orange juice
4 cloves Garlic, pressed
1 tsp Thyme & Rosemary
1-2 tsp Salt & Pepper (enough to cover both sides of each tenderloin)
2 Apples, peeled and cut into large chunks

Begin by preheating oven to 400 F and lining a 9x13 metal (or glass pan) with parchment paper. Place tenderloins onto parchment and season liberally with salt & pepper, then turn and season the other side. Then in a small bowl combine olive oil, honey, orange juice, garlic and herbs, whisk until combined, then pour over both roasts.
Add in chunks of apples and cook for 30-45 minutes until inserted meat thermometer reads 140 F (check the roast after 30 minutes, some tenderloins are smaller then others and will cook more quickly. Also be sure to turn roast about half way through cooking to ensure browning on both sides of tenderloin.
Remove pan from oven once tenderloins reach temperature, let rest on counter, cover pan with a lid or metal tray. Allow the meat to rest for 5-10 minutes to allow juices to coagulate. Then transfer tenderloins to a cutting board and roast apples into a small bowl. Slice roast thinly and serve with those sweet chunks of apples on top. This meal is great with potatoes(Mashed, Roasted, Scalloped or however you like them!) and a light Spinach Salad or a few Roasted Vegetabes on the side.
