Mango Salsa

This recipe is extremely versatile, feel free to use whatever you have in your

fridge or pantry. It will always turn out delicious!

INGREDIENTS


2 Mango's, peeled & diced (to the best of your ability)

1 Pepper (Red, Yellow or Orange), diced

1 cup Fresh or Frozen Corn

OR

1 can Black Beans, strained & rinsed

1/4 Red Onion, Diced

OR

3-4 Green Onions, Sliced thinly

1 Lemon, juiced

OR

2 tbsp White or Red Wine Vinegar

1 tbsp Olive oil

Salt & Pepper to taste

Cilantro, chopped

OR

Parsley, chopped (for those who don't enjoy cilantro)


Combine desired ingredients together in a small bowl. Stir together until combined. Taste for flavor and adjust as needed. Enjoy!
