Mediterranean Chickpea Salad




This is a fresh, simple, delicous vegeterian salad thats so easy to make!


INGREDIENTS


1 can Chickpeas, rinsed & drained

2-3 mini Cucumbers, chopped

(OR 1/2 an english cucumber cut in half & diced)

1 red Pepper (yellow or orange works too)

1/4 Red Onion, diced small

large handful Cherry tomatoes, cut in half

5-10 Kalamta Olives, pitted prefebly but if not watch out for pits!

1 lemon, juiced

2 tbsp Olive oil

1 tbsp Oregano

1/4 tsp each Salt & Pepper


INSTRUCTIONS


In a small or even medium sized bowl place drained and rinsed chickpeas.


Add in diced cucumbers, peppers, red onion, cherry tomatoes and kalamata oilves.


Add in lemon juice, olive oil, oregano and salt & pepper.


Mix until the dressing nicely coats the vegetables and chickpeas.


Serve fresh immediatly!


You can refridgerate for 1-2 days but its best to let it warm up toalmost room temperature again after being in the dressing as congealed.
