Kale & Broccoli Slaw with creamy Dressing

A super easy salad to whip up in a pinch, with a lovely creamy dressing. If you don't have kale and broccoli, try cabbage and carrot. Great with burgers, fried chicken or a family cook out!


INGREDIENTS


1 bag of Kale & Broccoli Slaw

OR try

1 bag of Cabbage and Carrot Coleslaw

1-2 handfuls Craisins

1-2 handfuls Pumpkin Seeds

Dressing:

3 tbsp Mayonnaise

3 tbsp Half & Half Cream (or milk but not as creamy)

2-3 tsp Sugar

2-3 tsp 1/2 Lemon juiced

(or if you don't have lemon try Apple Cider Vinegar OR White Wine Vinegar )

1/2 Lemon Zest

1 tbsp Poppy Seeds

Salt & Pepper


INSTRUCTIONS

Begin by adding kale & broccoli slaw to bowl OR cabbage and carrot. If you prefer to cut your own, be my guest! I have done it before it usually takes 1 bunch of kale, stems removed, and broccoli stems, outside hard peel removed, all chopped in a fine julienne.

Top with a few handfuls of raisins and pumpkin seeds.


To make dressing measure all listed ingredients together in a medium

sized bowl. Whisk to combine. Taste for flavors, adjust as necessary.

Pour over salad, toss and enjoy!
