A wonderful way to eat your fill of vegetables! Great as a side dish to any meal, or even to be made into a vegetarian sandwich with a little cheese and garlic herb mayo!
INGREDIENTS
1-2 Sweet Potatoes, peeled & sliced
1-2 Zucchinis, washed, cut diagonal
1-2 Peppers any color, washed, chopped
1 Red Onion, diced
1-2 tbsp Olive Oil
Salt & Pepper
INSTRUCTIONS
Start by preparing sweet potatoes by peeling and slicing. Continue on to cutting all
vegetables, aiming for uniform shapes & sizes as it will help when it comes to the roasting.
Place chopped vegetables in a large mixing bowl. Drizzle in oil and season with salt & pepper.
Place on a parchment covered baking sheet, spreading evenly.
Bake at 375 F for 20 or so minutes or until tender.
Serve with chicken, pork or even on a sandwich!
