Papaya Avocado Salad



A tropical salad with a refreshing from scratch papaya seed dressing!


INGREDIENTS

1 head Romaine Lettuce, washed

1 ripe Papaya

1 large Avocado, peeled and chopped

2 small Cucumber or ½ an English cucumber, diced

3-4 Green onions, chopped


Dressing:

½ cup White Sugar

½ tsp Dry Mustard

2 tsp Salt

2 tbsp Papaya seeds

½ cup White Wine Vinegar

½ cup Sunflower oil


INSTRUCTIONS

Wash romaine lettuce and dry with a salad spinner. I like to cut my up into bite sized pieces before washing as it fits better in the salad spinner but you do you! Place clean lettuce in your favorite salad bowl.

Halve the papaya and scoop out roughly 2 tbsp of the seeds and set aside. Peel the papaya (I use a potato peeler but a paring knife works just as well.) add papaya and chopped avocado, cucumber and green onions to your salad.

To make dressing:

Combine listed ingredients in a food processor or a good quality blender (like a vitamix), blend until the papaya seeds have the appearance of ground pepper. Just before your ready to serve, pour dressing over salad and toss. Enjoy!
