INGREDIENTS

Steak Marinade

1 pkg Stir fry Beef (already cut to the perfect size)

2 tbsp Olive oil

2 tbsp Dijion Mustard

2 tbsp Balsamic Vinegar (or dry Sherry works too!)

2 tbsp Worcestershire sauce

1 tsp garlic powder, thyme, parsley

1/4 tsp Red Pepper Flakes

1 tsp Salt & Pepper

Sandwiches

Marinated Beef

2 tbsp or so... Olive oil (if you need more add it!)

1 large Onion, thinly sliced

2-3 Green (or any color... i like green, yellow or even orange)

1 Poblano Pepper, thinly sliced (optional)

5-6 Mushrooms, sliced

Cheese- Either Provolone or White Cheddar

6 Chibata Buns

1 recipe of Garlic Herb Mayo

INSTRUCTIONS

In a small bowl whisk together marinade ingredients. In another bowl or a large Ziplock bag place beef. Pour marinade over beef and place in fridge to marinate for at least an hour.

Preheat oven to 400 F. Prepare Chibata Buns, slice in half and the place on a parchment covered baking sheet. Place in oven for about 10 minutes to crisp up.

Meanwhile, heat olive oil in large frying pan on a medium heat. Add beef and marinade to pan and cook for 5 or so minutes, stirring every so often. Remove from heat when little bits of pink remain in meat. You do not want to over cook the beef or it will be tough!

Using tongs remove beef from frying pan and place in bowl for later.

Add another dash of olive oil to the frying pan and left over marinade juices in frying pan. Add onions and cook for a few minutes. Then add peppers. If you feel like your mixture is to dry feel free to add more olive oil. Also add in an additional 1/2 tsp thyme, garlic salt and Salt & Pepper. If your adding mushrooms, do so now! Cook until little moisture remains.

Remove Buns from oven and spread each side with a tbsp of Garlic Herb Mayo. On one side spread cheese out evenly for each sandwich. Then on opposite bun layer beef & vegetables. Place back in oven or 5 minute until cheese is bubbly. Remove from oven and place cheese bun on top of beef cheese layer. Return to oven and bake for 5 more minutes until gooey and delicious! Slice in half and enjoy with a nice salad or Wedge Fries!
