Potato Pancakes

Need to use up that left over Mashed Potatoes you have sitting in your fridge? Well here is a tasty way! These go perfectly with a Ukrainian style meal w

ith Perogies, Roasted Honey Garlic Sausages, Caramelized Onions & Bacon and a whole lotta sour cream!


INGREDIENTS


3 cups left over Mashed Potatoes

2 Large Eggs, beaten

1/2-3/4 cups Flour

1/2 cups Cheddar Cheese, shredded

1 tsp Parsley OR Green Onions OR Chives

Salt & Pepper to taste

Sunflower Oil for Frying


Preheat a large frying pan or griddle to a medium heat.

In l large bowl add the mashed potatoes, eggs, cheese, herbs and salt & pepper. Stir ingredients together using a rubber spatula .

Grease the pan-skillet lightly, then form dough patties about 1/4 cup of batter each. Flatten the patty between you hands.

Fry on one side until golden brown, then flip and fry the second side golden as well.

Remove and place on paper towel to remove any excess grease.

Serve with sour cream and green onions or bacon bits on top!
