Pumpkin Pancakes

The perfect October breakfast treat! Fluffy Pumpkin flavored pancakes with the perfect amount of pumpkin spice. Top with maple syrup and whipped cream.


INGREDIENTS


2 cups Flour

3 tbsp Brown Sugar

1 tbsp Baking Powder

1/2 tsp Baking Soda

2 tsp Cinnamon

1/2 tsp Nutmeg

1/2 tsp Ginger

1/2 tsp Salt

1 cup Pumpkin Puree

1 Egg

1 1/2 cups Milk


INSTRUCTIONS


In a medium bowl combine dry ingredients, stir to combine.

In another medium bowl, combine pumpkin purre and egg, mix until completely combined. Add in milk and stir to combine with pumpkin mixture.

Pour pumpkin mixture in with flour and using a rubber spatula stir until ingredients are combined, do not over stir! The batter should be fluffy!

Heat a large frying pan or griddle and spray with non-stick spray, using a 1/4 cup measuring cup spoon batter onto pan and cook for a few minutes until bubble stop popping. Flip and cook the other side for a few more minutes. Serve hot topped with butter, maple syrup and whipped cream! Enjoy 🎃
