Pumpkin Scones





These scones are full of pumpkin spice flavor and will remind you of autumn! And they're quick to make too!


Ingredients



Scone

  • 2 1/4 cups all-purpose flour (scoop and level to measure)

  • 2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

  • 1/2 tsp ground nutmeg

  • 1/4 tsp ground ginger

  • 1/8 tsp ground cloves

  • 1/4 cup packed brown sugar

  • 1/4 granulated sugar

  • 1/2 cup unsalted butter or margarine, cold

  • 1/2 heaping cup canned pumpkin puree

  • 3 1/2 Tbsp cream or milk

  • 1 large egg

  • 1 tsp vanilla extract

  • 1 Tbsp honey

Icing

1/2 heaping cup Icing Sugar

1 tbsp milk or cream

1/2 tsp vanilla


Recipe



Scone:

Begin by preheating oven to 400 degrees. Then starting with a medium mixing bowl measure out dry ingredients, including flour, sugars, baking powder and soda, salt and finally spices.

Next take out your box


grater (cheese grater) and grate the cold butter or margarine on the largest size grater, be sure to scrape out the inside to get all of the butter out! Next add in the pumpkin pure, egg, cream, vanilla and honey. Using a rubber spatula slowly mix mix together the wet and the dry until it forms a rough ball, i find using your hands towards the end helps shape the ball easier and more quickly!

Now dust a small surface with flour on the counter and turn dough out, flatten it with your hands until it is about 1 1/2 inches thick and cut into 8 equal pieces. Prepare a baking pan with parchment, then place scone pieces on parchment. Bake in preheated oven for 15-20 minutes until fluffy and golden brown! Let cool then ice!


Icing:

In a small bowl measure out icing sugar, cream or milk and vanilla, whisking until it makes a smooth paste. Feel free to add 1 more tbsp of milk or cream if needed but be careful! You don't want soup! Then using your whisk or a spoon drizzle over cooled scones. And enjoy!
