This recipe works for Red, Yukon, Baby or even Sweet Potatoes! Whatever you have on hand, they always turn out delicious!
INGREDIENTS
6-8 Red, Yukon, Russet, Sweet or Baby Potatoes, rinsed
(If your using larger potatoes be sure to slice them a few times and the dice them all up to the same size. Or if your using baby potatoes I usually slice them in half or in thirds depending on how big they are. And feel free to mix sweet potatoes in with red or yellows to make rainbow potatoes!)
2-3 tbsp Olive oil
1 tsp Salt & Pepper
INSTRUCTIONS
Preheat oven to 400F then, depending on what kind of potatoes your using please follow the instructions above. Then place cut potatoes in a medium sized mixing bowl and season with olive oil and salt & pepper. Toss in the bowl until potatoes are evenly coated.
Prepare a baking sheet with parchment paper, then pour seasoned potatoes onto the baking sheet and place in oven. Cook for 25-35 minutes until golden brown and tender throughout. You may want to give them a stir about half way through cooking to be sure they reach a beautiful golden brown all over. Serve hot and fresh and enjoy!
