A wonderful way to eat your fill of vegetables! Made into a vegetarian sandwich with a little cheese, avjar, garlic herb mayo & fresh spinach. This is one tasty Vegitarian sandwich!
INGREDIENTS
Roasted Vegetables:
1 large Sweet Potato, peeled & sliced
1-2 Zucchinis, washed, cut diagonal
1-2 Peppers any color, washed, chopped
1 Red Onion, sliced
1-2 tbsp Olive Oil
Salt & Pepper
Sliced Ancient Grains Bread (or a nice Rye or French Bread works well too!), toasted
Garlic Herb Mayo
Avjar (Hot pepper spread, from the Italian Centre Shop)
1 pkg. Aged Cheddar Sliced Cheese
Fresh Spinach
INSTRUCTIONS
To roast vegetables:
Start by preparing sweet potatoes by peeling and slicing. Continue on to cutting all vegetables, aiming for uniform shapes & sizes as it will help when it comes to the roasting.
Place chopped vegetables in a large mixing bowl. Drizzle in oil and season with salt & pepper & toss until all of the vegetables are evenly coated.
Place vegetables on a parchment covered baking sheet, spreading evenly. Bake at 375 F for 20 or so minutes or until tender.
To assemble sandwiches:
Be sure to toast your bread as it makes for a much tastier sandwich! Spread onside of toast with a tablespoon of Garlic Herb Mayo, then a layer of fresh spinach, a healthy helping of roasted vegetables. Top with 2 slices of aged cheddar cheese. Spread a tablespoon of avjar on the top slice of toast to finish it all off & enjoy!
