Smashed Baby Potatoes with Garlic Butter & Parmesan Cheese


These potatoes are incredibly tender on the inside and yet amazingly crisp on the outside! Coated in a mouth watering garlic herb butter and topped with parmesan cheese – the perfect side dish for any meal!


INGREDIENTS

1-2 small bag Mixed Color Baby Potatoes (depending on how many people you are feeding)

½ cup Butter

3-4 cloves Garlic, pressed

1 tbsp Fresh Parsley

½ cup Parmesan Cheese

Salt & Pepper


INSTRUCTIONS

Start by placing baby potatoes in a large pot and filling 3/4s of the way with cold water and a pinch of salt. Bring potatoes to a boil and cook until just fork tender. Once potatoes are cooked you can drain them of water and then pour them out onto a parchment covered baking sheet, then taking a glass smash each potato until the inside just begin to burst out. You can also preheat your oven to 400F.

Then in a small sauce pan melt butter and add in the pressed garlic and parsley, give it a bit of stir and then remove from heat. Spoon butter mixture over entire tray. Finally top with parmesan cheese and bake for 25-30 minutes until golden brown and crispy! Enjoy!
