Fluffy Cinnamon spiced muffins filled with warm bites of pears and topped with a bit of strussel these beauties taste like fall baked right into a muffin!
INGREDIENTS
1/2 cup Butter
3/4 cup packed, Brown Sugar
1/4 cup White Sugar
2 Eggs
1 tsp Vanilla Extract
1 cup White Flour
1 cup Whole Wheat Flour
2 tsp Baking Powder
2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Salt
1/2 cup Milk (or dairy free substitute)
2 medium ripe, Pears, loosely chopped
Strussel :
2 tbsp each of :
Melted Butter, Brown Sugar, Rolled Oats, Flour
And 1 tsp of Cinnamon
INSTRUCTIONS
Preheat oven to 400 F, prepare muffin tins by lining with 12 cupcake liners or non-stick spray.
In your upright mixer using the paddle attachment blend together butter and sugars until light and fluffy.
Add in eggs on at a time, rememebering to scrape the sides of the bowl as you go.
Add vanilla & mix until incorperated.
In a medium bowl measure out flour, baking powder, spices and salt, mix to combine.
Add dry mixture & milk alternatively into butter mixture until. Scrape sides of bowl as you go mixing only until almost combined.
Remove mixing bowl from stand and fold in roughly chopped pears by hand. Spoon mixture into prepared muffin tins, filling 3/4s of the way full.
Combine struseel ingredients in a small bowl and mix to incorperate, spoon over muffins.
Bake for 15-20 minutes until golden brown and fluffy. Inserted tooth pick should come out clean. Enjoy with a fresh cold glass or milk or a hot mug of tea.
