A simple delicious pork stir fry with a spicy sauce! Toss in a few of your favorite stir fry vegetables and cook up a little rice and dinner is ready in under and hour!
INGREDIENTS
2 Pork Tenderloins, cut into bit size pieces
Sauce:
2 tbsp Hot Chili Paste
2 tbsp Soya Sauce
2 tbsp Brown Sugar
1 tbsp Dried Ginger or 2 tsp Freshly grated Ginger
2-3 cloves Garlic, pressed
2-3 tbsp Sesame Oil
Your Favorite Stir-fry Vegetables- I like using sliced carrot rounds, snap peas, chopped cabbage or Bok Choy (cut into 1/4s)
1/4 cup Chicken Stock
To serve: Fresh chopped Green Onions & Jasmine Rice
INSTRUCTIONS
Begin by cutting up pork tenderloin into bite sized pieces, place cut bits into a medium sized bowl.
Measure out sauce ingredients into a measuring cup and stir to combine. Pour marinade over the cut pork and let marinate for at least 20 minutes (or up to an hour).
To cook: Heat a wok or large non-stick frying pan with sesame oil. Spoon it marinated pork, saving the leftover marinade! Cook pork until tender, stirring often! The marinade will keep pork from getting dry! Once pork is cooked throughout (this should take about 5 minutes or so) add in your desired veggies, starting with those that take the longest (like carrots) and finishing with the bok choy (which only needs a few minutes really). You can now pour in the extra marinade and the chicken stock. Cooking for another few minutes and sauce it hot and veggies are perfectly cooked! Top with chopped green onions and serve over Jasmine Rice and Enjoy!
