This is a delicious pound cake with the summery flavors of strawberry & vanilla! Not to mention this is a great way to use up those sad looking strawberries in your fridge! Great on its own or topped with whipped cream and more fresh strawberries!
INGREDIENTS
1 1/2 cup Flour
2 teaspoons Baking powder
1/2 teaspoon Salt
1 cup plain or vanilla yogurt
1 cup White sugar
2 large eggs
1 1/2 teaspoon vanilla
1/2 cup vegetable oil
1 cup diced strawberries
INSTRUCTIONS
Begin by preheating oven to 350 F.
Then in a medium sized bowl measure out flour, baking powder & salt, stir together to combine.
In another medium sized bowl measure out yogurt, white sugar, eggs, vanilla, vegetable oil and whisk together until smooth.
Now pour the wet mixture into the dry and using a rubber spatula combine together until a small amount of flour is showing. Add in the diced strawberries and continue to combine until strawberries are mixed through and no flour spots remain.
Prepare a loaf pan by spraying REALLY WELL with vegetable oil spray or even parchment paper. Pour batter into prepared pan and bake for 1 hour until the top of the loaf begins to turn golden brown and an inserted tooth pick comes out almost clean. Remove from oven and let cool for at least 20 minutes inside pan. Then invert on a cooling rack and let pound cake naturally fall out of pan. Enjoy on its own or with some whipped cream and more fresh strawberries.
