A sweet Spinach salad with sliced strawberries, cucumber, nuts and crasins, topped with a creamy poppyseed dressing. A wonderful light salad to go with any meal. Pictured here: Dijion Bread Pork Chops and Scallopted Potatoes.

INGREDIENTS
Salad:
3-5 handfuls of fresh spinach (depending on how many people you are feeding..)
5-10 fresh Strawberries, washed & sliced
1/4 English Cucumber, diced
1/4 cup Roasted Pumpkin Seeds & Crasins(optional)
Dressing:
3 tbsp Mayonnaise
3 tbsp 10% Cream
1 1/2 tbsp White wine vinegar or 1/2 a Lemon Juiced
2 tbsp Honey or Sugar
1 tbsp Poppy Seeds
1/4 tsp Salt
INSTRUCTIONS
To make salad:
Start by measuring out the amount of spinach you need, (I usually do 1 largish handful per person) and then top with sliced strawberries, cucumber, seeds and crasins.
To make dressing:
Measure out listed ingredients in a small bowl, whisk to combine. Pour over assembled salad and toss! Enjoy!
