Sweet Potato & Black Bean Burgers

A savory vegetarian style burger with tender sweet potato chunks, black beans, oats & the perfect amount of spice!




INGREDIENTS

½ a large Sweet Potato, cut into chunks and boiled until fork tender

1 can Black Beans, drained & rinsed

½ Onion, chopped & cooked till light brown

2-3 cloves Garlic

½ cup Rolled Oats

¼-1/2 cup Flour 1 Egg (or VEGAN OPTION 2 ½ tbsps Ground Flax & equal parts water)

A handful of fresh Basil, roughly chopped

1 tbsp McCormicks Roasted Red Pepper & Garlic

1 tsp Salt & Pepper

½ tsp Cumin

½ tsp Chili Powder

1 pinch of Red Pepper Flakes



INGREDIENTS

In a food processor add in rinsed black beans & using the pulse button, mash them up until they are a chunky paste like consistency. Using a rubber spatula remove beans and place in a medium sized mixing bowl. Next cut the cooked sweet potato into smaller more manageable chunks and add into the mixing bowl with the beans. You can use the food processor to do this step if you like, but be careful not to make the sweet potatoes into paste! Next add in the cooked onions, garlic, chopped basil, oats, flour, egg or flax seed mixture & spices. Using a spatula or simply using your hands combine the mixture. Do not over mix! There should still be chunks of black beans & sweet potatoes! If your mixture is to wet you can add another tablespoon or two of flour. Scoop out mixture into equal ball shapes and place on a baking sheet prepared with parchment. Leave space between each bean ball, the spray the tops of the balls and using a small glass flatten the balls into burger shapes. If you have a medium to large round cookie cutter you can use this to shape them into more proper patty like shapes. Heat a non-stick frying pan of medium heat with a few tablespoons of sunflower oil. Place patties in pan and cook until golden brown, flip and repeat this process. Place back on your prepared baking sheet and Bake at 400F until completely warm throughout! This should only take about 15 minutes or so! You can also just cook a few Burgers off and freeze the rest on a pan. Once they are frozen you can easily put them in a Ziploc bag or container!
